A small room, a long shift, and the food we wanted to eat.
I left a corporate kitchen because I was making the same eight dishes for the third year running. Opened DesiBitess with a friend who handled the front of house and a line cook who's still here.
First Friday we did 22 covers and burned the marinara. Second Friday we did 41 and didn't. Word got around.

Came in for the burger because of the cup-and-char pepperoni pizza on a friend's Instagram. Ended up ordering both. The marinara on the chicken parm is the real story.
Brunch on Saturday with my mom. The Nashville hot was hotter than the menu suggested — I loved that, she did not. Server brought her a side of coleslaw without asking. Small thing, mattered.
Booked the back table for my anniversary. Asked for the salmon medium-rare which is not technically a thing — they did it anyway and it was perfect. We'll be back for our 10th.
